Question: Is it going to hurt the value of my antique chevy to do bodywork repairs myself?

I think the value is already hurt with the damaged door. Fix it correctly and you are good to go. It could hurt doing it yourself if you don't know what you are doing. If you are trying thins your first time by a damaged door at a junk yard and practice on it before doing something stupid on a car you value. Practice make perfect good luck.

take your time and pay careful attention and it shouldnt as most classic cars are rebuilt and fixed up by the owner of said cars (i think its a pride thing)

take it to a body shop and have them put on a new door skin, that's all you need and have the door repainted.
